Coconut milk is produced in two grades: light and thick. To extract it, the striped pulp is squeezed and a strainer is used to separate the liquid from the solid (which is what is used to produce thick milk). In this way, light coconut milk is obtained, which is then put in warm water for a few minutes.

Coconut milk (thick) is used especially in desserts and to add flavor to certain sauces, while light milk is often used in a specific type of sauce called gravy and in soups.


On the other hand, to extract the coconut cream it is necessary to follow a procedure similar to that described above. The coconut is scratched, then mixed with water and simmered until it becomes foamy. A strainer is used to separate the milk and it is put in the refrigerator . Once it cools, the milk is underneath and what is left on top is the cream.

This cream that remains on top is sweetened and thus coconut cream is obtained, which is much thicker than milk and should not replace the latter in a recipe.
